We have chosen a lovely and easy fish and chips recipe which is high in protein, vitamin B, phosphorus and selenium. While the pudding might not be so much on the healthy side, make sure to add lots of fresh fruits to get in those 5 a day for your little ones!
Crispy Cod Fingers with Potato Wedges
Serves 4
This is an absolute classic in any household and tastes amazing! These wedges are to die for and even the fussiest eaters will adore them!
Fish Fingers
- 4 skinned cod fillets (160g per fillet)
- 2 large eggs
- 100g fresh breadcrumbs
- 1 Tsp mixed herbs (if your child isn’t fussy)
Potato Wedges
- 4 Russet potatoes cut into wedges
- 1 Tsp mixed herbs
- 2 Tbsp Soy sauce
- Salt and Pepper
- Spray Oil
Heat the oven to 200°C/180°C fan/ gas 6.
In a bowl, toss the potato wedges with the soy sauce, mixed herbs, a tsp of salt, and 1/4 tsp of ground pepper. Spray about 5-10 pumps of oil, making sure that not too much is used otherwise the potatoes can go greasy quite quickly. Place them on a baking sheet and roast for about 25-30 minutes, making sure to turn halfway through. They will go a beautiful mottled brown colour.
Heat your grill to high. Slice each cod fillet into two or three fingers or smaller for little ones. Beat the eggs lightly in a shallow bowl and tip the breadcrumbs into a separate bowl with a good pinch of salt and pepper and the mixed herbs. Coat each cod finger in the egg and then in the breadcrumbs, and place on an oiled baking sheet. Grill for 6-7 mins or until cooked through and golden.
Serve immediately, with a side of vegetables that your children will eat!

Marshmallow Chocolate Mousse

Serves 4
This delicious mousse is a treat for any family!
- 140g marshmallow
- 360ml milk
- 170g dark chocolate
Optional toppings
- Whipped/Squirty cream
- Grated chocolate
- Fresh strawberries and raspberries
In a medium saucepan, combine the marshmallows and milk. Cook over a medium heat making sure to stir constantly till the marshmallows are fully melted. This usually takes about five to seven minutes.
Pour this marshmallow mixture over the chocolate in a medium bowl. Let it sit for two to three minutes, and then stir until it is all combined.
Divide it between 4 bowls, and leave in the fridge to set for about an hour, or until it is set. Top with some whipped cream, fresh fruit or what ever you fancy!
